BLIND TIGER BREWERY - STAFF
|
JOHN DEAN is the Master
Brewer for the Blind Tiger.
Shown here on the left,
calculating bittering units for a
new brew being developed, he is
the motivator and brains behind
the push to develop new and
exciting beers, while maintaining
the purity of the recipes to his
gold medal winning "standard"
beers.
John is never hesitant to try new
and different techniques -- and
his customers love the
opportunities to try the new
developments he and his team
come up with.
Here, Assistant Brewer Al Canizales, in black,
oversees the weighing of grain during a clinic
in which he and John worked with local home
brewers to help them understand the brewing
process.
John stands over the mash tun and explains to
home brewers during a clinic the important
attributes for ensuring grains are appropriately
mixed in the heated water to ensure the
sugars can be drawn from them without also
pulling in tannins that will hinder the flavor of
the final beer.
John has a long history of working with local Topeka home brewers. He started his
training under his father, a long-time home brewer and member of the local "Greater
Topeka Hall of Foamers." With the other members of the club as mentors, John
became the master brewer for the High Noon Saloon in Leavenworth, KS, then Barley's
Brewhouse in Topeka, before becoming the Master Brewer for Blind Tiger.
